Ingredients Carrot Cake
• 2 cups almond flour
• 4 eggs
• ½ cup honey
• ¼ cup melted butter
• 3 cups grated carrots
• 1 cup chopped walnuts
• 1½ teaspoons baking soda
• 2 teaspoons cinnamon
• 1 teaspoon vanilla extract
• ½ teaspoon salt

Greek Yogurt Frosting
• ½ cup thick Greek yogurt
• 3 tablespoons honey
• 1 teaspoon vanilla extract
• Lemon zest (optional)

Instructions:
1. Preheat the oven to 350°F (180°C) and grease a cake pan.
2. In a bowl, whisk the eggs, honey, melted butter, and vanilla.
3. Add almond flour, baking soda, cinnamon, and salt. Mix gently.
4. Fold in the grated carrots and walnuts.
5. Pour the batter into the pan and bake for 35–45 minutes, until set.
6. Let the cake cool completely.

Frosting:
Mix Greek yogurt, honey, vanilla, and lemon zest until smooth.
Spread over the cooled cake.
