Here’s my latest fruit-in-disguise creation: a hyper-realistic kiwi pastry! It features layers of soft kiwi sponge, a fresh kiwi compote, and a light kiwi mousse, all encased in a crisp white chocolate shell. For the final touch, I molded a bowl out of chocolate to look just like hand-sculpted clay.
