RECIPE
Heat a pan over medium heat with coconut oil
Sauté the salt & peppered chicken with skin side down and place a weight.
Cook the chicken thoroughly over low heat. If sautéed right, the skin gets crispy when about 90% of the meat has been cooked. Turn the chicken so it has internal temp. of 68℃ or more.Take out the chicken from the pan and remove the oil.
Vegetable stock 30 g

Heat it and mix. Reduce the sauce a little.
