Authentic Degi Chicken Korma
Chicken korma is a great dish if it’s done right and it’s royal and has no comparison. This is a recipe that has been around forever.This recipe is approved by my whole family, and I’ve received so many compliments that it tastes just like the Degi Korma exactly how it is served on weddings.
Ingredients:
Chicken: 1 whole 1 kg
Oil: 1/2 cup (oil amount is a personal choice; you can use less or more)
Onions: 2 medium-sized, thinly sliced
*ginger garlic paste fresh: 1 tbsp each
Prepare the korma masala:
Coriander seeds: 1 tsp
Cumin seeds: 1 tsp
Green cardamom: 3 pods
Whole black peppercorns: 1/2 tsp
Fennel seeds: 1 tsp
*mace: 1 piece
Black cardamom seeds only (leave the outer part for other recipes or when making pulao)
Grind all the korma spices and make a fine powder
Spices:
Salt: to taste or 1 1/2 tsp
Red chilli powder : 1 tsp
Degi mirch: 1 tsp
Kashmiri red chilli powder: 1 tsp
Turmeric: 1 tsp
Coriander powder: 1 tsp
Bayleaf: 2
Black cardamom: 1
Green cardamom: 2
Cumin: 1 tsp
Cinnamon stick: 1 inch
Yogurt : 1 cup
Instructions:
Add oil to a pan. Once the oil is hot, add the onions and fry them on medium heat until crispy. Remove from the oil and spread on a plate.
In the same oil, add bay leaf, black cardamom, green cardamom, and cumin seeds. Fry for 30-40 seconds, then add the chicken. Fry the chicken until it changes colour, which takes about 2-3 minutes.
Add the spices: salt, turmeric, coriander powder, red crushed chilies, Degi mirch, and Kashmiri mirch. Adjust the spice levels according to your preference. The mixture of these chilies gives a very nice colour and taste to the korma. Fry for an additional 2-3 minutes.
Grind the fried onions with 1 cup of yogurt and add it to the chicken. Fry well until the masala is well combined. Then, let it cook on low heat until the chicken becomes tender, ensuring to mix in the middle.
Add 1 tsp of korma masala to the chicken when it’s halfway cooked.
If required add 1/2- 1cup of water
*serve hot with naans
