Pulihora Pindi (Pulihora Rice Flour Snack) – Description & Preparation
Pulihora Pindi, also known as Pulihora Gojju Pindi or Pulusu Pindi, is a traditional South Indian (especially Telugu/Tamil) savory snack made using rice flour, tamarind pulp, and a tempering of spices. It's tangy, mildly spicy, and slightly nutty – reminiscent of the taste of tamarind rice (pulihora), hence the name.
🥣 Ingredients:
Rice flour – 1
1 1/4cup (sieved for fine texture)
Water – as required
Salt – to taste
Tempering:
Oil – 2 to 3 tbsp (preferably groundnut or sesame oil)
Mustard seeds – ½ tsp
Chana dal (split Bengal gram) – 1 tsp
Urad dal – 1 tsp
Peanuts - 2 spoon
Dry red chilies – 5 broken
Green chilies – 4 chopped
Curry leaves – a few
Asafoetida (hing) – a pinch
Turmeric powder – ¼ tsp
Roasted peanuts – 2 tbsp (optional, for crunch)
Lemon - 2
🔥 Preparation Steps:
Tempering:
Heat oil in a heavy-bottomed pan or kadai.
Add mustard seeds and let them splutter.
Add chana dal and urad dal, peanuts and fry until golden.
Add dry red chilies, green chilies, curry leaves, and a pinch of hing.
Add turmeric powder and mix well.
Add Rice Ravva:
Lower the flame and gradually add rice Ravva while stirring continuously to avoid lumps.
Stir until the mixture comes together like a soft dough.
Cover and cook on low heat for 5–6 minutes until it's fully cooked and leaves the sides of the pan.
Final Touch:
Mix well and turn off the heat. Add Lemon juice after it is cool.
🍽️ Serving Suggestion:
Serve Pulihora Pindi warm or at room temperature as a snack or light tiffin.
