I have a few other recipes to still try but these are the start
crackers made from real food grains. recipe sources comes from
Melissa K. Norris these are her whole wheat crackers recipe.
WHOLE WHEAT MILLED CRACKERS:
1 1/4 C. milled Hard white wheat flour (or you can use all purpose for those who are not using milled flour. )
1/4 tsp each,
onion powder. smoked paprika
garlic powder
chili powder
1/4C. water
1/4C. honey
4 Tbsp butter, softened
salt to sprinkle on top
1. preheat oven 400 F. degrees
2. in mixing bowl cut butter in flour until dough is like peas, add seasonings. add in honey and slowly add water just until moist and holds together.
3. lightly flour surface of baking sheet. roll dough out 1/4" thick. use pizza cutter to cut into shapes. prick with a fork, sprinkle with salt
bake 7- 10 minutes.
this next recipe is from grains in small places.
fresh milled cheese its;
8oz cheddar cheese grated ,( use block)
4 Tbsp softened butter
1 tsp salt + sprinkling on top
1C. fresh milled flour ( 120g soft wheat berries, combo spelt And soft wheat, soft and hard wheat. if using combos make sure all come to 120g ( 60g +60g each = 120g)
2 Tbsp water cold
1. mill flour, preheat oven 375 Degrees F.
2. shred cheese
3. in stand mixer mix butter, cheese and salt.
4. add flour mix dough should be crumbly
5. slowly add water, only add just enough until dough ball forms. ( you don't want it sticky)
6. wrap in plastic wrap, chill 1 hr
7. cut dough on half, wrap the other half.
8. roll dough 1/8" thick
9. cut with pizza cutter into small squares, poke each in center with a chop stick in the.
10. sprinkle with salt, bake 13-15 minutes or golden brown on edges.
11. let cool, store in air tight container up to 1 week. or freeze in freezer bag 4-6 months.
