Easy Kaya Recipe (Homemade Coconut Jam)

Kaya is coconut jam made with coconut cream or milk, flavoured with pandan leaves and sweetened with palm and white sugar. This is the stuff that nostalgic dreams are made of!
Once made, place in the fridge for up to 10 days.

Ingredients (makes about 300 ml/ 2 1/5 cups)
4 pandan leaves
250 ml (1 cup) coconut cream or coconut milk with at least 70% coconut extract. See Notes below
1 tsp cornflour (cornstarch in the US)
4 egg yolks large
90 g (3 oz) white sugar caster or granulated
30 g (1 oz) gula melaka or coconut sugar/brown sugar, see article
1 pinch salt

0:47 blend pandan leaves, then strain
0:30 make cornflour paste
2:43 heat pandan juice, coconut milk, sugars and salt
3:10 whisk egg yolks and add cornflour paste
3:25 temper egg yolks
4:22 heat everything up and cook until thickened
5:17 transfer to a jar, cool to room temperature and refrigerate. Use within 10 days.
