🍗 Chicken Bhuna Tawa Fry – Full Recipe
📝 Ingredients
For marination
Chicken (bone-in or boneless) – 500 g
Ginger-garlic paste – 1 tbsp
Red chilli powder – 1 tsp
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Lemon juice or curd – 1 tbsp
Salt – to taste
For bhuna masala
Oil – 3 tbsp
Butter (optional, for flavor) – 1 tbsp
Onions (finely chopped) – 2 medium
Green chillies (slit) – 2
Ginger-garlic paste – 1 tbsp
Tomatoes (finely chopped or crushed) – 2 medium
Red chilli powder – 1 tsp
Kashmiri chilli powder – 1 tsp (for color)
Coriander powder – 1½ tsp
Cumin powder – ½ tsp
Garam masala – ½ tsp
Black pepper powder – ½ tsp
Kasuri methi (crushed) – 1 tsp
Salt – as required
For garnish
Fresh coriander leaves – chopped
Lemon wedges
Onion rings (optional)
👨🍳 Method
1️⃣ Marinate the chicken
In a bowl, mix chicken with ginger-garlic paste, chilli powder, turmeric, coriander powder, lemon juice/curd, and salt.
Marinate for 20–30 minutes (longer = better taste).
2️⃣ Prepare the tawa bhuna base
Heat a heavy tawa or flat pan on medium flame.
Add oil + butter.
Add chopped onions and sauté till golden brown.
Add green chillies and ginger-garlic paste, sauté till raw smell disappears.
3️⃣ Add tomatoes & spices
Add chopped tomatoes and cook till oil separates.
Add chilli powder, Kashmiri chilli, coriander powder, cumin powder, pepper, and salt.
Bhuna (roast) the masala well on low flame until thick and aromatic.
4️⃣ Cook the chicken
Add marinated chicken to the tawa.
Mix well and spread evenly.
Cover and cook on medium-low flame for 10–12 minutes, stirring occasionally.
Open lid, increase flame slightly and bhuna fry till chicken is well coated and slightly crisp.
5️⃣ Final touch
Add garam masala and crushed kasuri methi.
Mix and roast for 2 more minutes.
Garnish with coriander leaves and lemon juice.
🍽️ Serving Suggestions
Serve hot with roti, naan, paratha, or rumali roti
Also tastes great as a starter with onion rings & mint chutney
