Anda Noodles (Street-Style)
Ingredients:

Noodles – 1 packet

Eggs – 2–3

Oil – 2 tbsp

Garlic – 1 tbsp (finely chopped)

Ginger – 1 tsp (finely chopped)

Green chillies – 1–2 (chopped)

Onion – 1 medium (sliced)

Capsicum – ½ cup (optional)

Cabbage – ½ cup (optional)

Soy sauce – 1 tbsp

Green chilli sauce – 1 tsp

Tomato ketchup – 1 tbsp

Vinegar – ½ tsp

Black pepper – ½ tsp

Salt – to taste

Spring onions – for garnish

Method:

Boil noodles in salted water till just cooked. Drain and keep aside.

Heat oil in a wok on high flame. Add garlic, ginger, and green chillies. Sauté quickly.

Add onions and vegetables. Stir-fry for 1–2 minutes (keep them crunchy).

Push veggies aside, crack eggs into the pan. Scramble well and cook till soft.

Add boiled noodles and toss well on high flame.

Add soy sauce, chilli sauce, ketchup, vinegar, pepper, and salt. Mix thoroughly.

Stir-fry for another 1–2 minutes.

Garnish with spring onions and serve hot.
