📌 Paneer Biryani – Recipe Card
🟡 Ingredients
For Paneer
• Paneer – 250 g
• Turmeric – ½ tsp
• Salt – ½ tsp
• Chilli powder – 1 tsp
• Oil – 1 tbsp
For Masala
• Oil – 3 tbsp
• Onions (finely chopped) – 2 medium
• Bay leaf – 1
• Saunf/Sajeera – ½ tsp
• Cardamom – 2
• Cinnamon stick – 1 inch
• Cloves – 3–4
• Green chillies – 2 slit
• Tomato paste – 2 tbsp
Spices:
• Salt – 1 tsp (adjust)
• Chilli powder – 1 tsp
• Coriander powder – 1 tsp
• Cumin powder – ½ tsp
• Biryani masala – 1 tsp
Herbs & Curd:
• Mint – ¼ cup
• Coriander – ¼ cup
• Curry leaves – 6–8
• Curd – ½ cup
• Water – ½ cup
For Rice
• Basmati rice – 2 cups (soaked 1 hour)
• Water – 6–7 cups
• Mint – ¼ cup
• Coriander – ¼ cup
• Ginger garlic paste – 1 tbsp
• Whole spices – bay leaf + cinnamon + cardamom + cloves
• Salt – 1 tbsp
• Lemon juice – 1 tbsp
• Oil – 1 tbsp
• Rose petals – 1 tsp (optional)

🟢 Method
1️⃣ Prep Paneer
Mix paneer with turmeric, salt, chilli powder & oil.
Air fry 5–8 mins.
2️⃣ Fry Onions
Fry chopped onions until golden. Keep aside.
3️⃣ Make Biryani Masala
Add whole spices → green chillies → half fried onions → tomato paste.
Add spices + herbs + curd + air-fried paneer + ½ cup water.
Keep aside.
4️⃣ Cook Rice (80%)
Boil water with mint, coriander, spices, ginger garlic paste, salt, lemon, oil & rose petals.
Add soaked rice and cook till 80% done.
5️⃣ Layer & Dum
Layer rice + paneer gravy.
Cook 15 mins low flame + 15 mins medium flame.
6️⃣ Serve
Yummy Paneer Biryani is ready! Serve with raita. 😍
