MAKING A MICHELIN STAR DISH AT HOME IN A FEW EASY STEPS: ROASTED EGGPLANT WITH CURRIED YOGURT

We met for a delicious home made meal at the home of our friends Anna and Rich who live in Redwood City, CA. Rich cooked a roasted eggplant with curried yogurt using a recipe from Yotam Ottolenghi book "Simple" (the recipe is below). Rich used all fresh and healthy ingredients, some coming from their own garden, and showed us how you can make a healthy, delicious and beautiful dish at home in just an hour! And then you can enjoy this wonderful dish at home in the company of family and friends. Because food is first and foremost is about nurturing, sharing and enjoying time together! And Anna and Rich's friend Cezar (a founder of Gambit Lounge restaurant in San Francisco) also showed us how you can pair great food with the right wine. He brought three different wines that could beautifully complement this great dish.
Recipe for the Roasted Eggplant with Curried Yogurt:
3 eggplants
1 onion
1 lime or lemon
Greek or non-dairy yogurt
Pomegranate seeds
Almonds
Olive oil
Curry powder, turmeric, salt, pepper to taste
Peal the eggplants in tiger/zebra fashion, cut in 3/4 inch slices, smear with olive oil, sprinkle with salt and pepper, and bake for 45-50 minutes at 450 F. Mix yogurt with curry powder, turmeric, salt and lemon juice. Slice and caramelize onions. Stack roasted eggplants on yogurt sauce and decorate with caramelized onions, almonds, lemon zest and pomegranate seeds. Serve and enjoy!
