KABULI PULAO | AFGHANI PULAO
Kabuli Pulao is a regal Afghan dish that combines tender mutton, fragrant basmati rice, and a unique blend of sweet caramelized carrots and raisins. This wholesome meal, rooted in Afghan tradition, perfectly balances savory and sweet flavors, making it a symbol of hospitality and celebration.
Ingredients
For Caramelized Carrots and Raisins:
2 medium carrots, julienned
2 tbsp ghee
1 tbsp sugar
2 tbsp Afghan raisins (or zirish/regular raisins)
For Mutton and Rice:
500g mutton (bone-in pieces)
2 medium onions, sliced
3 tbsp ghee
2 cups basmati rice, soaked for 2 hours
1 tsp cumin seeds (zeera)
1 tbsp salt (adjust to taste)
4 cups water (adjust accordingly)
Steps
1. Prep Work:
Soak basmati rice for 2 hours.
Julienne the carrots for caramelizing.
2. Caramelizing Carrots and Raisins:
Heat 2 tbsp ghee in a pan. Add julienned carrots and sugar, sauté until the carrots caramelize slightly. Add Afghan raisins or zirish and sauté for a minute. Set aside.
3. Cooking the Mutton:
In a wide pot, heat 3 tbsp ghee. Add sliced onions and cook until soft and translucent.
Add mutton pieces and sauté until the mutton changes color and the onions turn golden brown. This gives the pulao its rich color. Add salt and cumin seeds. Sauté for a few minutes. Pour 4 cups of water into the pot, cover, and cook until the mutton becomes tender. Strain the mutton stock, set the mutton aside, and taste the stock to ensure it’s well-seasoned.
4. Cooking the Rice:
In the same pot, add the soaked rice and enough stock to cook the rice (around 1:1.5 rice-to-stock ratio). Cook the rice until it’s 60% done.
5. Assembling the Pulao:
Layer the cooked mutton pieces over the rice. Top with the caramelized carrots and raisins. Cover with a tight lid and place the pot on dum (low heat) for 15 minutes until the rice is fully cooked and the flavors meld together.
6. Serve:
Fluff the rice gently and serve this Afghan delicacy warm. Enjoy the perfect balance of savory and sweet flavors—a true taste of Kabul!
