Masala Dosa
Ingredients
1. Boiled potatoes (2 to 4) – ½ kg
2. Big onion slices – 1 to 1 ½ cups
3. Chopped ginger – ½” cube
4. Chopped green chilli – 3 to 4
5. Salt – to taste
6. Turmeric powder – a big pinch
7. Dosa batter – 3 cups
8. Ghee +sesame oil – 2 tbsp
Seasoning
9. Coconut oil – 1 to 2 tbsp
10. Black gram dal – 1 tsp
11. Mustard seeds – ½ tsp
12. Curry leaves – 2 twigs
For chutney
Coconut + green chilli + salt + curry leaves
Preparation
1. Season the items 10, 11, 12 in coconut oil, sauté ginger, green chilli & add the big onion, sauté till translucent & cook 3 to 4 minutes with turmeric powder & a little salt.
2. Add the peeled crushed potato, sauté 3 to 4 minutes again adding salt.
3. Then boil adding water & make a little mushy. Set aside.
4. Spread out the batter into a thin dosa, gradually sprinkle ghee – sesame oil mixture, cook a little more, spread the masala on one half of the dosa, chutney on the other half.
5. Fold the chutney half, over to the masala half, cook till the under side is yellowish red. Serve while hot.
