Crispy Rice Dumplings
100g tofu, mashed
1/4 medium cabbage, chopped
1/2 medium carrots, grated
2-3 pcs shiitake mushroom
1 tsp grated ginger
sesame oil
8-10 pcs rice papers
Instructions:
•Prepare the vegetables, chopped 1/4 of a medium cabbage, grate the carrots or you can chop it. Grate the ginger, roughly chopped 2-3 pcs shiitake mushrooms.
• In a pan add oil, sauté cabbage, carrots and mushrrom until limp, add the grated ginger and mashed tofu
• season it with salt and black pepper.
• set aside and let it cool.
• Get a rice paper and soak it in water for a few seconds. In a a shallow dish with water, slide the rice paper until wet for around 5 seconds. Remove it and place it unto your work surface
• Add the cooked vegetable filling in the middle and fold both sides. Roll it up to completey seal the filling inside. You may double the rice paper if you want.
• In a pan with oil, fry it until lighty golden brown and crispy.
• serve warm with your favorite dipping sauce and enjoy!
