Elegant, comforting, and visually striking — caramelized fennel cooked in ghee butter, paired with a silky bean purée and tender whole beans. Finished with fresh dill and a touch of lemon for brightness.
Ingredients (serves 1–2 or as a side):
2 fennel bulbs, quartered (fronds removed)
1 can (15.8 oz / 450 g) Great Northern beans, drained (reserve some liquid)
1 can (15.8 oz / 450 g) garbanzo beans, drained (reserve some liquid)
25–30 g ghee butter (or another oil)
1 small shallot, finely chopped
1 garlic clove, finely chopped
Small bunch fresh dill, chopped
Juice of 2 small lemon slices
Salt
Instructions:
1. Caramelize fennel: Heat ghee butter in a large pan. Cook fennel quarters on all sides until golden, then continue cooking until tender.
2. Sauté aromatics: In another pan, heat ghee butter. Add shallot and cook until golden. Add garlic, stir briefly.
3. Cook beans: Add drained Great Northern and garbanzo beans (reserving a little liquid for blending). Warm through, then turn off heat. Stir in fresh dill.
4. Make purée: Reserve a small portion of the bean mixture for garnish. Blend the rest with a splash of reserved bean liquid, salt, and lemon juice until smooth and silky.
5. Plate: Spread bean purée on a serving dish. Arrange caramelized fennel on top, spoon over whole beans, and garnish with fresh dill.
