Chicken Milanese is a classic Italian dish consisting of tender chicken breasts that are coated in breadcrumbs and Parmesan cheese, then pan-fried until crispy and golden brown. The dish is often served with a side of arugula salad dressed with lemon vinaigrette, making for a refreshing and satisfying meal.
INGREDIENTS:
2 chicken breasts
2 eggs
Chile crisp or Sambal
Breadcrumbs
Flour
Butter
Olive oil
1 lemon
Parmigiano Reggiano cheese
Italian seasoning
Garlic powder
Salt & pepper
DIRECTIONS:
Slice each chicken breast into ½ inch thickness
Place on plastic wrap and pound into ¼ inch thickness
Season each side with salt & pepper to taste
Crack 2 eggs, add 1 tablespoon of Chile Crisp or Sambal, add 2 teaspoons of water and beat until well mixed
Season the flour with salt & pepper to taste, and the breadcrumbs with Italian seasoning and garlic powder to taste
Line up the flour, the seasoned egg mix and breadcrumbs
Dredge each breast with flour, then dip it in the egg mix and cover with breadcrumbs
Heat 2 tablespoons of olive oil and 2 tablespoons of butter on medium high
Slice 1 lemon into wedges
Fry each side for 2 minutes or until golden brown
Plate each on a bed of lettuce seasoned with olive oil and salt & pepper to taste
Squeeze lemon juice over chicken
Grate Parmigiano Reggiano cheese over chicken
