In Morocco we prepare a lamb tajine with prunes and lamb. In Agadir Morocco Ramdan 2021 has begun and we decided to try our hand at Moroccan cuisine in our Bohemian Kitchen. For Moroccan iftar tonight we have tajine lehlou, or what I believe it to be as a tajine with lamb prunes, almonds, and onions. Do not forget the Moroccan Spices!
Tonight Mor Acro is cooking alongside a yoga teacher living in Morocco. She is English, but she is dedicated to learning darija, a Moroccan Arabic dialect. We check in with my French neighbor Mel2Fit to see how his fast went. This was his first time dry fasting for Ramadan.
Tajine is popular in North Africa, with Tunisia and Algeria, celebrating tajine. Tajine is a popular food in Africa as well as France. We do not like zitoune in our tajine, but the plums were just perfect carmalized in honey and cinnamon. I am confused if this is tajine lehlou, I am just learning tajines have names. It is not just a beef tajine, or a lamb tajine, their are different combinations of vegetables, fruits and spices in the Moroccan Bohemian kitchen. Inchallah this Ramadan I continue to learn more about Moroccan cuisine, the people, and language of the country of Morocco.
