Ingredients for Mighty Lentil Curry (Serves 4):
• Green Lentils: 200 g (7 oz / 1 cup)
• Onion: 1 large (approx. 150-200 g / 5.3-7 oz)
• Garlic: 2 cloves (approx. 10-15 g / 0.35-0.5 oz)
• Ginger: 2-3 cm piece (1-1.5 inch / approx. 20-30 g / 0.7-1 oz)
• Olive Oil: 15 g (approx. 1 tbsp / 0.5 oz)
• Spices:
• Turmeric: 1 tsp (5 g / 0.18 oz)
• Curry: 1 tsp (5 g / 0.18 oz).
• Ground Cumin: 1 tsp (5 g / 0.18 oz)
• Curry Sauce/Paste: 1 tbsp (15 g / 0.5 oz)
• Nutmeg: 1 tsp (approx. 2-2.5 g / 0.07-0.09 oz)
• Italian Herbs: 1 tsp (approx. 2-3 g / 0.07-0.1 oz)
• Tomato Sauce: 300 g (10.6 oz)
• Coconut Milk: 200 ml (6.8 fl oz)
• Water (or vegetable broth): 400 ml (13.5 fl oz)
• Salt: to taste
• Black Pepper: to taste
• Butter: 1 tbsp (15 g / 0.5 oz) (optional, at the end)
• Fresh Parsley: for garnish (approx. 15-20 g / 0.5-0.7 oz)
For Serving:
• Rice (Basmati or any other): 200 g (7 oz / 1 cup)
• Water for cooking rice: 300 ml (13.5 fl oz / 2 cups)
