Today I'm going show you how to make Wonton soup!. Thai street food there are many noodle shops selling street food such as wonton noodle soup, rice noodles soup, egg noodle soup, Tom yum noodle soup, dried egg noodle but I chose one of them for you today.
Ingredients
To make pork broth
9-10 pieces of pork rip
3 chunks onion
4 chunks sweet corn
3 chunks cabbage
5-6 cloves garlic
1 teaspoon black peppercorn
10 pieces coriander stem
3 tablespoons oyster sauce
1 tablespoon salt
1 1/2 tablespoons sugar
2 tablespoons rock sugar
To make filling
1 lb ground pork
1 cup corn
2 tablespoons oyster sauce
2 tablespoons soy sauce
1 1/2 tablespoons sugar
1 teaspoon salt
1 teaspoon black peppercorn
4-5 diced garlic
1 1/2 tablespoons chopped coriander stem
Instructions
We will start with making the broth add about 1 tablespoon of cooking oil 5-6 cloves of crack garlic, 1 teaspoon of crack black peppercorn, 10 pieces of coriander stem then toasting on medium heat to get nice aromatic scent. These are main ingredients to make Thai tradition broth,but we also like to add on/ in many food as well. Then add pork rib you can use pork bone or chicken, both work well, then continue toasting the meat with herbs on medium- high heat for a few minutes then you would get a flavor of meat. Now it’s time to add water, I'm going add 1 and 1/2 litter of water then add vegetables for more sweetness in the broth I am adding 4 chunks of sweet corn,3 chunks of onion,3 chunks of cabbage, seasoning with 3 tablespoons of oyster sauce,2 tablespoons of rock sugar, 1 1/2 tablespoons of white sugar, 1 tablespoon of salt( If you think it too much sugar those vegetables give sweetness already, you can adjust the sugar or skip it if you don't like but it our tradition we like to add sugar in our food but how much sugar and what kind of sugar you want, depending on which recipe).Ok, cover the ribs, bring it to a boil, Once it come to a boil, turn the heat to medium-low heat, take the scum out to make the soup clear, then let it cooking for 2 hours.
While the broth is cooking , We're going make the filling, I got 4-5 cloves of garlic and already diced, 1/2 tablespoons chopped coriander stem, 1 teaspoon of black peppercorn then finely pound them well, set it aside. For the meat today I use ground pork( only ground pork cause one of my friend can't eat seafood) you can go ahead add shrimp or pork fat if you like softer texture then season with 2 tablespoons of soy sauce,2 tablespoons of oyster sauce, pounded herbs, 1 cup of kernel corn I use from a can then combine together. Then add 1 teaspoon of salt ( I almost forgot it) continue mixing together but don't forget to wash you hands before you mix it.
Alright! after finished. We're going to wrapping you can find wonton wrapper at local Asia market any brand you wish they all work well. Add the filling on the wrap about 1/2 or 1 tablespoon, fold both side corners of the wrap together then fold other of both side like this you don't need to seal it but if you want to seal it I'm going show you on another one, for this one I'm going seal it with egg you can also do with water as well. Once you finished wrapping set them aside.
We're going filter the broth I won't add any more seasoning in the broth but just want to add some of stalks of green onion for aroma, set it on low - medium heat.
Then we're going get black to cooking the wonton, put them in boiling water then cook for about 4-5 minutes, fresh wonton doesn't take long, I like to add green vegetables to cook in there as well, just a minute then take them out, any green vegetables you wish such as kale, spanish, broccoli.
Now wonton is ready to go, add the broth into the bowl, serve with box choy, sprinkle with chopped green onion and cilantro, your good to go but if you like to add chili oil, it will also work well.
Basically we like to have condiments, like sugar, vinegar, fish sauce, chili flake to seasoning on our soup or any noodles soup but if you don't like you can go ahead with original soup is fine.
