Delicious Xmas Chocolate Crinkle Cookies that are Vegan and Gluten free
Ingredients :
50gr cacao powder (1/2 cup)
200gr sugar (1 cup)
55gr oil (1/4cup)
60gr Aquafaba water (1/4cup)
2tsp vanilla extract
30gr tapioca (1/4cup)
1tsp baking powder
1/2 tsp xanthan gum
Salt
25-35gr powder sugar (1/4-1/3cup)
120gr GF all purpose flour (1cup)
In a bowl add cacao powder, sugar and oil. Mix well and then add vanilla extract and aquafaba. Combine well and put on side. In another bowl mix flours, baking powder, xanthan gum and salt. Combine the two and make a dough. Cover with plastic foil and leave in freezer to firm up. Then make a balls with a tbsp of dough and coat nicely in powdered sugar. Put 8 balls on baking paper with a lot of space in between. Bake in preheated oven on 175°C (350°F) for 12 min. Enjoy!!
