Green Tea and Mochi Bread 绿茶麻糬软欧面包
Soft and chewy mochi, crunchy pistachio, and sweet dried fruits. This is a bread with several distinct textures and flavours combined into one. The taste of green tea is not too strong, just right to give a soothing green hue to the bread.
You can replace the green tea powder with matcha powder, if you prefer. And yes, strictly speaking, there is a difference between matcha powder and green tea powder.

Ingredients: (3 medium loaves)
(A) Bread dough
Bread flour 高筋面粉 270g
Cake flour 低筋面粉 15g
Salt 盐 1/4 tsp
Sugar 砂糖 40g
Green tea powder 绿茶粉 10g (or matcha powder 或抹茶粉)
Instant dried yeast 酵母 1/2 tsp
Egg 蛋 1 no.
Milk 牛奶 130g
Butter 奶油 40g
(B) Mochi
Glutinous rice flour 糯米粉 70g
Corn flour 玉米淀粉 20g
Sugar 砂糖 20g
Milk 牛奶 120g
Butter 奶油 15g
(C) Filling
Dried cranberry 蔓越莓干
Pistachio 开心果
Yuzu peel 蜜渍柚子皮
Bake at 200C for 15 - 20 minutes
