芝士奶蓋抹茶蛋糕 🍰 Cheese Milk Form Matcha Cake
抹茶蛋糕
雞蛋 3隻
糖 50g
植物油 35ml
牛奶 50ml
抹茶粉 10g
低筋麵粉 60g
檸檬汁 1tsp
芝士奶蓋
忌廉芝士 50g
糖 10g
牛奶 50ml
淡忌廉 40ml
鹽 1/2tsp
1. 預先準備6吋蛋糕模,於模內塗上植物油防黏
2. 將3隻雞蛋的蛋黃蛋白分開,蛋白不能沾到蛋黃、水或油
3. 蛋黃加入細砂糖20g攪拌至砂糖融化,再加入35ml植物油和50ml牛奶,攪拌均勻
4. 再加入過篩的60g低筋麵粉和10g抹茶粉,拌勻
5. 蛋白加入少許檸檬汁,用電動打蛋器以中高速打至粗泡,然後加入細砂糖30g(分2次加入),以高速打發成細緻且尾端挺立的蛋白霜
6. 挖少許蛋白霜混入蛋黃麵糊中,用刮刀沿著邊盆輕輕翻轉及畫圈方式攪拌均勻,再將拌勻的麵糊倒入其餘蛋白霜中快速混合均勻
7. 攪拌好的麵糊倒入烤模,在桌上輕敲出大氣泡
8. 出爐後馬上倒扣在杯子上,完全涼透後才可脫模
9. 將軟化的忌廉芝士50g加入細砂糖10g及1/2tsp鹽,加入牛奶50g,攪拌至順滑,再加入已打發好的淡忌廉40g,均勻
10. 將做好的奶蓋淋在蛋糕上,面層再放上少許珍珠便完成

Matcha Powder 10g
Flour 60g
Lemon Juice 1tsp
Cheese Milk Form
Cream Cheese 50g
Sugar 10g
Milk 50ml
Whipped Cream 40ml
Salt 1/2tsp
1. Cover a 6-inch cake pan with vegetable oil
2. Separate 3 eggs' white and yolk
3. Combine the egg yolk and 20g sugar, then combine the mixture, 35ml vegetable oil and 50ml milk
4. Sift 60g flour and 10g matcha powder to the batter and mix well
5. Beat the egg white and lemon juice with an electric mixer until bubbles form, and add the 30 grams of sugar in 2 batches and beat well between additions
6. With a spatula, fold-in a few beaten egg whites into the batter and combine the batter and the remaining egg white
7. Pour the mixture into the cake pan
8. Invert the pan immediately on two mugs or a wire rack. Let it cool completely.
9. Soften 50g cream cheese in a room temperature, mix it with 10g sugar, 1/2tsp salt and 50g milk, then add 40g Whipped cream to the mixture
10. Pour the cheese milk form on top of the cake and top it with some bubbles. Ready to serve
