🇨🇺 Traditional Masas de Cerdo Fritas | Cuban Fried Pork Chunks
This is the authentic way to make Masas de Cerdo: crispy on the outside, juicy on the inside, and topped with a classic onion Mojo.
Ingredients:
Pork: Pork chunks (Pierna/Shoulder).
Seasoning: Salt and Black Pepper to taste.
Garlic: 2-3 Garlic cloves, lightly crushed (whole).
Frying: Lard (Manteca de Cerdo).
For the Mojo: Lard, 1 White Onion (sliced into rings), and Sour Orange Juice.
Instructions:
Cook the Meat: Place the pork chunks in a pot. Add salt, pepper, and the 2-3 lightly crushed garlic cloves. Cover with water and boil until the water evaporates completely.
Fry: Once the water is gone, add Lard (Manteca) to the pot. Fry the pork chunks in the lard (along with the garlic) until they are golden brown and crispy.
Make the Mojo: In a separate pan, heat up some clean lard. Add the onion rings and sauté for exactly 2 minutes (until soft but not burnt). Then, pour in the Sour Orange Juice and remove from heat.
