First, take 1 kg of beef and 200 g of fat, and mince them together finely.
Next, take 500 g of onions, grind them, and remove all the excess water using a muslin cloth.
Then grind one whole bunch of fresh coriander (dhaniya) with 3–4 green chilies.
Now add the following ingredients to the minced meat:
Ground onions
Ground coriander and green chilies
4 tablespoons ghee
2 tablespoons crushed coriander seeds
2 tablespoons crushed red chili
2 tablespoons cumin seeds (zeera)
3 tablespoons gram flour (besan)
1½ tablespoons salt
Mix everything thoroughly until well combined.
Shape the mixture into shami kabab–style patties.
Heat oil in a pan and shallow-fry the kababs on medium heat until golden brown on both sides.
Serve hot with mint chutney and salad.
