Traditional pimento cheese is super sharp - this version is made with a taco cheese mixture and has a different, yummy flavor.
Ingredients
3 cups of grated cheese -- I am using a half and half mixture of Colby and Jack, but you can use the more traditional sharp cheddar if you prefer.
8 ounces cream cheese
3 tablespoons mayonnaise
1/4 teaspoon each of red pepper flakes, garlic powder, onion powder and paprika
1 4 to 5 ounce jar of diced pimentos (reserve juice)
Salt to taste
