Shaxian Delicacies originated during the Qin and Han dynasties and flourished in the Ming and Qing dynasties. They come from Shaxian County in Sanming City, Fujian Province, China. As a distinctive branch of Fujian cuisine, Shaxian Delicacies are also one of the iconic representatives of affordable Chinese fast food. They combine Central Plains culinary traditions with Fujianese and Tingzhou Hakka influences, creating a unique flavor profile that blends northern heritage with local characteristics. Signature dishes include dumpling soup (Bian Rou), tossed noodles, stewed soup (Dun Guan), steamed dumplings, fish balls, and lantern cakes, among others. With a variety of over 240 types, the "Big Four Classics"—dumpling soup, tossed noodles, stewed soup, and steamed dumplings—are particularly renowned.
