Making Niagara white wine using frozen grape juice concentrate. For 5 gallons start with 10 cans white grape juice concentrate, 6.5 pounds sugar, enough water to make 5 gallons, 1 TBS acid blend, 2.5 tsp pectic enzyme, 5 tsp yeast nutrient, sulfites, wine yeast. Add sulfites and sorbate at bottling. Sweeten at bottling with 1 can grape juice concentrate and about 4 cups sugar.
