Here we take a classic and throw a couple curveballs its way. We start by smoking the glass with thyme to set the mood... Ok, maybe not to set the mood specifically but it does add some nice smokey notes to the cocktail. We've replaced the traditional sweet vermouth and threw in some white aperitif, slightly dryer and a little less herbaceous. Blueberry bitters gives this Negroni a fun and subtle fruity characteristic that plays nicely with the Campari's citrus notes.

"The Negroni is a popular Italian cocktail, made of one part gin, one part vermouth rosso, and one part Campari, garnished with orange peel. It is considered an apéritif. A traditionally made Negroni is stirred, not shaken, and built over ice in an old-fashioned or rocks glass and garnished with a slice of orange."
