Here’s a recipe for Eggless Whole Wheat Dates and Walnut Cake using the ingredients provided:
Ingredients:
• Dates: 150g (seedless, approx. 1 cup)
• Hot Milk: 250ml (1 cup)
• Salted Butter: 50ml (1/4 cup)
• Whole Wheat Flour: 175g (1½ cups)
• Powdered Brown Sugar: 40g (1/4 cup) (optional)
• Milk Powder: 2 tablespoons
• Cocoa Powder: 4 tablespoons
• Baking Powder: 1 teaspoon
• Baking Soda: 1/4 teaspoon
• Milk: 50ml (to adjust consistency)
• Cinnamon Powder: 1 teaspoon (optional, for flavor)
• Walnuts: A handful, roughly chopped
Instructions:
1. Prepare the Dates Mixture:
• Soak the seedless dates in hot milk for 25-30 minutes until soft.
• Blend the dates and milk into a smooth paste using a blender or food processor.
2. Prepare the Oven and Pan:
• Preheat your oven to 180°C (350°F).
• Grease and line a baking pan with parchment paper or butter.
3. Mix the Wet Ingredients:
• In a large bowl, whisk together the date paste and salted butter until smooth and creamy.
• Add the powdered brown sugar (if using) and mix well.
4. Combine Dry Ingredients:
• In another bowl, sift together the whole wheat flour, milk powder, cocoa powder, baking powder, baking soda, and cinnamon powder.
5. Prepare the Batter:
• Gradually fold the dry ingredients into the wet mixture.
• Add milk in small portions to adjust the batter to a smooth, pourable consistency.
• Fold in the chopped walnuts, reserving a few for garnishing.
6. Bake the Cake:
• Pour the batter into the prepared baking pan.
• Sprinkle the reserved walnuts on top for a nice crunch.
• Bake for 40-45 minutes at 150 degrees temperature or until a toothpick inserted in the center comes out clean.
7. Cool and Serve:
• Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
• Slice and serve as a snack or dessert.
Tips:
• The sweetness from the dates may be enough, so brown sugar can be skipped if preferred.
• Toast the walnuts lightly before adding them for enhanced flavor.
• You can replace walnuts with almonds or pecans if desired.
