286 million tonnes of pasta, rice and bread - cereals in general - are wasted every year. A shocking figure and one that can be fixed with a little creativity in the kitchen.
In episode four of Why Waste? Massimo Bottura enjoys the recipes of his chef from Franceschetta 58, Francesco Vincenzi, who teaches us all a great way to use leftover pasta with a crispy, cheesy, Macaroni pie - or “second-life pasta pie” as Massimo calls it.
There’s also a recipe for using old bread crusts and transforming them into a wonderful Caramelised Bread Crust Cake, plus some tips on how to store things like bread and cooked rice to extend their life and waste less food.
