Mike brewed a classic American Pale Ale featuring Simcoe and Centennial hops!
He built this APA using a simple grist of Valley Malt Pale Malt and a touch of Munich to keep the malt character clean while letting the hops take the spotlight. This was also one of the last beers he could brew using the no-chill method in a cold garage before the weather started to warm up.
The wort was boiled for 40 minutes, just enough time to reach the target gravity. At flameout, he added 2 ounces of Simcoe and 2 ounces of Centennial hops. Instead of chilling with a wort chiller, he sealed the kettle and let it cool overnight using the no-chill technique.
You might expect that adding this amount of hops at flameout and allowing them to steep hot would create an overly bitter beer. We thought the same thing. But the final result was pleasantly balanced. The beer had just the right amount of bitterness and delivered a bright lemon-rind aroma with flavors of citrus and papaya on the palate.
With temperatures rising, it looks like the no-chill setup will be packed away until the colder months return. That don't befront us none, we'll keep brewing on.
