INGREDIENTS:

1.5lbs - 2lbs chuck beef
1/2lb cooked ham
Olive oil for cooking
1 tsp Adobo
1/2 tsp onion powder
2 heaping tablespoons Sofrito
6oz tomato sauce (I mistakenly said a little over a can lol)
2 bay leaves
1 - 1.5 packets Sazón
1 beef bullion
3-5 garlic cloves
1/2 bell pepper
1-2 chopped carrots
1 yuca root
1 Ñame root (taro or Carribean yam root)
2-3 small potatoes
2 green plantains or green bananas
1 cup of either butternut squash, pumpkin, or acorn squash
2 ears of corn, cut into thirds
Cilantro for garnish (optional)
OPTIONAL (not shown) - 1 yautia/malanga root

Note: While the foundation of Puerto Rican Sancocho should never change (sofrito, tomato sauce, seasonings, etc), you may swap for whatever root vegetables are accessible to you! Yuca root and pumpkin (calabaza) should be the easiest to find besides potatoes and carrots, so add those!
