All this while I should have been using a No knead for baking my sourdough. I made two sourdough breads same day with my No knead sourdough bread recipe using easy steps. I hope this makes your sourdough bread making at home more flexible.

Full Recipe (2 Loaves)
Dough
812g All purpose flour
527g Water
40g Room temp Sourdough discard
Pinch of salt (8g)
Mix all ingredients together until well combined, cover and let it proof for 5 hours at room temp.
Two options after 5 hours
1. Place in the fridge overnight and bake in the morning
2. Bake same day
Same Day Bake
Place in the fridge for an hour to cool down before shaping. Preheat oven to 240*C
Prepare baking trays by laying parchment paper on the tray.
Remove bulk fermented dough from the fridge after one hour, divide the dough into two and shape. Immediately Place each shaped dough on the baking tray
Tip!
After shaping leave the first cold shaped dough to be baked at room temp to rest 30 mins before placing in the oven. This will give better oven spring and crumb.
Score and cover the dough, place in the oven and bake for 20 minutes.
After 20 minutes, remove cover from the dough and reduce heat to 200*C and continue baking for another 25 mins. Enjoy golden brown and delicious bread.
Rest the second shaped dough in the fridge while the first is baking. Repeat the same process with the second dough, no need to rest for 30mins at room temp. before baking.
Place in the Fridge Overnight
Same baking process applies if you chose overnight dough.
