A light and creamy French apple cake made with puff pastry, silky vanilla crème pâtissière, and tender baked apples. Simple, elegant, and melts in your mouth.
Ingredients
1 puff pastry
2 cups (0.75 L) whole milk
4–5 egg yolks
Pinch of salt
2 tbsp cornstarch (optional, for thicker texture)
2 tbsp butter
1 vanilla bean
1 tsp vanilla extract
4–6 apples
Melted fruit jam for glaze (raspberry or apricot)
Instructions
Pre-bake the puff pastry for 15 minutes at 180 °C / 350 °F.
Prepare the vanilla pudding (crème pâtissière) and let it cool.
Slice the apples and drizzle with lemon juice.
Spread the pudding on the pastry, arrange the apples on top.
Bake 40–45 minutes at 180 °C / 350 °F until apples are soft.
Brush with melted jam for a glossy finish.
