Prawns Biryani Recipe | Restaurant Style Jhinga Biryani | Easy Dum Prawn Biryani at Home

📝 Ingredients (Serves 3–4 people):
✅ For Marinating Prawns:
Prawns – 300 grams (peeled and deveined)
Curd (Dahi) – 3 tbsp
Ginger-Garlic Paste – 1 tbsp
Turmeric Powder – ½ tsp
Red Chilli Powder – 1 tsp
Coriander Powder – 1 tsp
Garam Masala – ½ tsp
Lemon Juice – 1 tbsp
Salt – as per taste
✅ For Rice:
Basmati Rice – 1½ cups (soaked for 30 mins)
Water – 5 to 6 cups
Whole Spices: 1 bay leaf, 4 green cardamoms, 4 cloves, 1-inch cinnamon, 1 star anise
Salt – 1½ tsp
Ghee – 1 tsp
✅ For Biryani Gravy:
Oil – 3 tbsp
Ghee – 1 tbsp
Sliced Onions – 2 large (fried till golden brown)
Chopped Mint Leaves – 2 tbsp
Chopped Coriander – 2 tbsp
Slit Green Chillies – 2
Fried Onions – for layering
Saffron – few strands soaked in 2 tbsp warm milk
Kewra Water – ½ tsp (optional)
Biryani Masala – 1 tsp (optional)
👩🍳 Recipe Instructions:
🔸 Step 1: Marinate the Prawns
In a bowl, mix prawns with curd, spices, lemon juice, and salt. Cover and marinate for 30 minutes.
🔸 Step 2: Cook the Rice
In a large pot, boil water with whole spices, salt, and ghee. Add soaked rice and cook till 80% done. Drain and set aside.
🔸 Step 3: Make the Gravy
In a heavy-bottomed pan, heat oil and ghee. Add marinated prawns and cook on medium-high for 5–6 minutes till prawns are just cooked. Add mint, coriander, green chillies, and some fried onions.
🔸 Step 4: Layering the Biryani
In the same pot or handi, layer half the rice over the prawn mixture. Add some fried onions, saffron milk, kewra water, and ghee. Repeat with remaining rice and toppings.
🔸 Step 5: Dum Cooking
Cover the pot tightly with a lid or dough seal. Cook on low flame for 15–20 minutes. Let it rest for 10 minutes before serving.
🍽️ Serving Suggestion
Serve hot with raita, salad, or boiled egg. Perfect for weekends, family dinners, or special occasions.
