Hello everyone, this is Yuri an Akira!
In today’s episode we took a different approach for a diffrence and started a sub series called
“SUSHI MASTER’S TAKE ON…”
1st video is about Acqua Pazza.
Akira and I am a HUGE fan of Italian cuisine; in fact we eat more than sushi in our daily life :D
As a Sushi chef, focus is based on how careful and detailed we prepare (Shikomu 仕込む) each ingredients.
One of main theme of this episode is Hard Clam (ホンビノス貝 Honbinos Clam)
Regardless of what you make with it, Akira san will show you step by step HOW-TO on clam preparation.

Remarks:
⚫︎We used 300ml White wine but if you can also reduce it with water.
(E.G. 150ml White wine: 150ml Water)

⚫︎You can replace Seabream with all kinds of snapper, grouper, cod,rockfish and more!

⚫︎Hard clams can also be replace with other clam. Purging method is generally the same as well.
