Ingredients :
Colocasia leaves washed and cleaned 10-15 medium size
Dosa Rice 4 cups
Methi 1 tsp
Dhaniya2+ tsp
Cumin seeds 1tsp
Red chilli 10-15
Coconut grated 1 cup
Tamarind big lemon size
Jaggery powder 1/2 cup
Salt as needed
Turmeric 1/2 tsp
Hing a pinch
Oil
To make pathrode oggarane:
Chopped pathrode 1 big bowl
Oil 2 tb sp
Mustard
Urad dal
Broken red chilli
Curry leaves
Hing
Coconut grated 1 cup
Jaggery 1/4th cup
Red chilli powder 1tsp
salt
Coconut oil 1 tb sp
Method:
1.soak rice and methi together for 3-4 hrs.
2.grind with rest of the ingredients except leaves. Make a thick coarse batter.
3.wash and clean the leaves, dry them using towel and remove the backside vein by knife before using.apply the paste on to the leaf which is kept upside down, go on placing one above the other and follow the same procedure. Fold and Roll it tightly and steam cook for 35-40 minutes. Place them on a banana leaf if you have.
Once done cut them into round slices and they are good to enjoy with coconut oil or butter.
To make pathrode oggarane:
At first chop steam cooked pathrode to small pieces and keep in a vessel.
Place a kadai on stove, add oil. Once it's hot go on adding mustard, urad dal, Curry leaves, red chilli hing one by one. Add in fresh coconut, salt, jaggery and red chilli powder. Mix well and add chopped pathrode to it. Mix everything really well and oggarane patrode is ready to serve.
