In this recipe video, I will be teaching you how to make Nethali katharikai moju aka brinjal moju/pickle are fried dry sprats/nethali fish, eggplant strips, shallots, and green chillies mixed with mustard vinegar to pickle them. giving it a combo of sweet, sour, and heat.
Ingredients:
Mustard Seed-4 Tsp
Vegetable White vinegar-1 Tbsp
Vegetable Whine vinegar-1/3 Cup Or 80 ML
Salt-1/2 Tsp
Plain Chili Powder-2 Tsp
Chili Flakes-1 Tsp
Turmeric powder-1/4 Tsp
Cinnamon-6 pieces
Sugar-4 Tsp
Fried Bringal/Eggplant-3 Or 510 grams
Fried Dry Sprats-200 Grams (added 1/2 Tsp of chili powder before frying)
Fried green Thai chili-65 Grams (fried only for 30 seconds)
F Small Shallots-225 Grams (fried for 30 Seconds)
Fried Capsicum-125 (fried for 35 seconds)
Fried Curry Leaves sprigs-2
Fried Rampa/pandan-5 pieces
