INGREDIENTS

Pork - 1lb
Coconut Milk - 3/4 cup (to cook pork)
Fish Sauce - 1 tsp (to cook pork)
Coconut Cream - 2 tbsp
Red Curry Paste - 4 tbsp
Vegetable Oil - 2 tbsp
Water - 1.5 cup
Fish Sauce - 2 to 3 tbsp (will need to adjust depending on saltiness of your curry paste)
Palm Sugar - 1 tbsp
Coconut Milk - 1/2 cup
Bamboo Shoots - 1 handful
Thai Eggplants - 7 eggplants
Spur Chilis - 3 chilis
Thai Basil - 2 handfuls
Kaffir Lime Leaves - 5 leaves
