Boost Your Energy - Easy Vegan Salad!
This healthy and satisfying salad recipe is ideal for lunch or dinner. Just 15 minutes to make a nourishing meal!

INGREDIENTS
200 g chickpeas ( I used ready-made from a can )
1 avocado
4 medium-sized mushrooms ( I used shiitake )
half of the bell pepper
greens ( I used arugula and spinach )
1 cucumber
a few radishes
a few cherry tomatoes or a regular tomato
1 tsp paprika, 1 tsp oregano, 1/3 tsp mix of grounded peppers, 1/4 tsp kurkuma
2 brazil nuts or other nuts
lemon or lime juice
INSTRUCTIONS
1. Turn on the oven to 200 °C and wash all the veggies.
2. Cut the mushrooms, bell peppers and transfer them into a bowl.
3. Open the can with chickpeas, rinse half of the can ( approximately 200 g) and add them in the same bowl.
4. Add spices and mix well.
5. Place on a baking sheet lined with parchment paper.
6. Bake for about 10-15 minutes, while preparing other ingredients.
7. Cut the tomatoes, radishes, cucumber, nuts, avocado.
8. Add washed greens.
9. Remove the baking tray from the oven and mix all the ingredients.
10. Sprinkle with lime juice & enjoy!
