Coronation Chicken Sandwiches For Afternoon Tea

In 1953, a special dish called Coronation Chicken was created to celebrate the coronation of Queen Elizabeth II. Although it did not start out as a sandwich filling, that’s how you will often find it - on Afternoon Tea trays in England. It also works very well in a tartlet. How have you had Coronation Chicken? There are many variations of the recipe. This is how I make it. RECIPE BELOW. Hope you’ll give it a try!

CORONATION CHICKEN RECIPE:
6oz / 170g chicken breast
Poach the chicken breast in chicken broth (or water) until cooked through - about 10 minutes
When cooled, in a medium bowl, shred into small pieces and set aside
In a separate bowl combine:
4Tb / 52g mayonnaise
1/4 tsp curry powder
1/4 tsp cinnamon
2Tb/20g golden raisins (sultanas)
2 or (12g) dried apricots - chopped small
1Tb/15mL Half & Half or cream
1Tb/16g mango chutney
Stir well and add to the chicken. Once mixed in, add:
Squeeze of lemon juice
Salt & pepper to taste
Optional add: 2Tb/14g sliced almonds, toasted in preheated oven at 350F/177C/Gas Mark 4 - about 5-6 min.
Unsalted butter for sandwich bread
For phyllo cups: after toasting the almonds, pop the phyllo cups in the same oven for 3-5 min. to crisp them up a bit. Enjoy!
