Easy Chocolate Brownie Mousse Cake

Super simple recipe for a delicious cake!
Use any 500g brownie or even any cake mix of your choice for base and follow the easy recipe behind package.
Pour mixture into a springform tin lined with baking paper (around base of tin and sides) and bake at 180 degrees until baked.
Once baked, set aside to cool completely.
Mousse top:
500ml fresh cream
2 tablespoons icing sugar
1 teaspoon vanilla essence
320 grams dark chocolate melted
Whip the cream with icing sugar and vanilla essence until stiff, melt the chocolate and fold in 350ml cream a little at a time.
Spoon on top of baked and cooled brownie base and set in fridge for 3-4 hours or overnight.
Serve with remaining fresh cream. Enjoy!
