Today, we're taking you on a foraging adventure with 'Totally Wild' around Delamere Forest in Cheshire (UK). We spent a fantastic four hours with the brilliant Hazel, learning all about easy-to-find and some slightly more adventurous plants and trees.

ELDER TREE (Edible - Elderflowers in spring/ summer & elderberries in autumn)
The ‘witch’s tree. Extremely common in hedgerows and woodland edge. Fragrant clusters of creamy flowers make wonderful champagnes, cordials and sweet fritters. The luscious purple-black berries are perfect for wine, jams and syrups. Host tree to Jelly Ear fungus.

ROSEBAY WILLOWHERB (Edible)
AKA Fireweed. Edible pith and flowers. ‘Ivan Chai’ is a decaf tea made from Rosebay Willowherb leaves and was THE tea drink in Britain - (Russia’s 2nd largest export for centuries apparently), until the British East India Tea Company monopolised the market with the drink we know and love today! It’s said to be a good medicinal tea, but also it tastes very similar to normal tea too.
