Why do people develop food sensitivities?

One of the most common questions I get is why do people develop food sensitivities? It comes down to a combination of things that typically involves losing immune tolerance—when the immune system becomes hyperactive to foods. Loss of immune tolerance involves immunological breakdowns that make one more prone to food sensitivities and allergies.
Factors like leaky gut can lead to loss of immune tolerance. (To read more about immune tolerance and foods, check out this article.) So can the way modern foods are grown and processed. Things like hybridization, GMOs, pesticides, aflatoxins in grain storage, and food additives trigger reactions to foods in various people. Autoimmune cross-reactivity (when the immune system mistakes body tissue for an antigenic food protein) is another potential cause.
Repairing a leaky gut or loss of immune tolerance may allow a person to introduce foods back into their diet. However, some food sensitivities require lifelong avoidance. Food allergies, which cause a more immediate reaction than food sensitivities, involved different immune dynamics and approaches.
