Recipe:
Water: 200 ml (initial) + 15 ml (reserved for later)
1 egg yolk
Honey 18g
Active Starter 70g
Bread flour 300g ( protein 12.8g )
Salt 6g
Filling
Butter: 90-105g, frozen
(If you like a salty flavour, use salted butter; if not, use unsalted.
If it’s your first time making this, starting with 90g is easier)
Baking time
Bake 230°C for 20 mins with steam
Remove the steam and bake 230°C for another 15-20 mins
For Dutch oven
230°C with lid bake for 20 mins
230°C without the lid bake for 15-20mins
