Step back 4,000 years into the royal kitchens of ancient Mesopotamia! In today’s video, we are recreating Mersu, widely considered history’s first documented dessert.
Recorded on cuneiform tablets from the city of Mari around 1750 BCE, this "edible archaeology" predates refined sugar, chocolate, and modern pastry techniques. It was so prized that King Zimri-Lim employed eight dedicated "Mersu specialists" just to perfect its preparation.
Ingredients:
Emmer whole grain flour - 325g
Allspice - 1-1/2tsp
Butter (softened) - 150g
Date syrup or honey - 175g
Filling:
Dates paste - 150g
Pistachio - 80g
