Prawn ramen
1 rice noodles nest
1/2 pack prawns
Broth ingredients:
1 bowlful of boiling water
1 vegetable stock cube
1 tbsp soy sauce
1 tsp fish sauce
1 tsp rice vinegar
1tsp sesame oil
1 clove garlic
1 thumb sized piece of ginger
1/2 a chilli
Vegetables suggestions:
1/2 pepper
Handful of mushrooms
1/2 a carrot
Pak choi or other Chinese vegetables
Mangetout
1.Add the water to sauce pan and bring to the boil
2.Add in all of the broth ingredients and stir
3.Finely slice the garlic, ginger and chilli
4.Slice your chosen vegetables relatively finely
5.Add all vegetables to the broth, stir and leave to boil for 5 mins, then simmer for 5 mins
6.Add the rice noodles and prawns and cook for a further 2/3 mins until the rice noodles are soft.
7.Serve with some extra soy sauce if needed
Teriyaki tofu
75 jasmine rice
Half a block of firm tofu
2tbsp cornflour
1 handful green veg
1 spring onion
1/2 a chilli
Thumb sized piece of ginger
Sesame oil
1 1/2 tbsp soy sauce
1/2tsp fish sauce
1tsp honey
1.Drain the tofu, remove excess water with paper towel and slice in to cubes
2.Add the cornflour to a plate, place the tofu on top and use your hands to coat the pieces thoroughly
3.Slice the green veg in to chunks and finely slice the spring onion, chilli and ginger
4.Cook the jasmine rice in a saucepan over the hob
5.Heat a little sesame oil in a frying pan and add the tofu chunks to fry for around 7 mins, turning every few minutes to ensure they’re cooked on all sides
6.Add the greens, spring onion, ginger and garlic to the pan, followed by the soy sauce, fish sauce and honey and stir. Make sure pan is on a medium heat and not too hot at this stage
7.Add the greens to the pan to cook until soft (this will probably take a further few mins)
8.Drain the rice and serve with the tofu and greens
Veggie sausage pasta
75g pasta
3 vegetarian sausages
1/2 an onion
Handful of broccoli
1/2 a pepper
200ml passata
1/2 clove garlic
1/2tsp honey
1tsp mixed herbs
1 vegetable stock cube
Salt and pepper
2tsp pecorino cheese
1.Boil the pasta over the hob in a saucepan
2.Slice the sausage and vegetables in to even chunks
3.Heat a little olive oil in a frying pan and add the sausages and vegetables to cook for around 7 mins, stirring occasionally
4.Add the garlic, passata, stock cube, honey, salt and pepper, stir thoroughly and leave to cook for a further few minutes
5.Add the pasta, combine thoroughly and serve with the cheese
