Ingredients you need
For Besan Squares
1 cup besan (chickpea flour)
2½–3 cups water (use 3 cups for a softer texture)
⅛ tsp kasoori methi (dried fenugreek leaves)
⅛ tsp turmeric powder
⅛ tsp ajwain (carom seeds) – optional
⅛ tsp red chilli powder
⅛ tsp garlic powder or paste
½ tsp salt
1 tbsp oil (for cooking the batter)
For Gravy
1 cup onion ground with ½ cup cilantro (leaves and stems)
1 tbsp ginger-garlic paste
¾ cup cauliflower stalks, chopped (or potatoes)
½ tsp turmeric powder
2 large tomatoes, pureed
1 tsp red chilli powder
Salt to taste
¼ cup canola oil
3 cups water (more if needed)
