Curry leaves chutney is a flavorful and healthy Indian chutney made with fresh curry leaves, coriander, mint, and a nutty mix of peanuts, sesame, and coconut. 🌿 Ingredients / सामग्री
Curry Leaves /करी पत्ता – 1 cup
Fresh Coriander / हरा धनिया– ½ cup
Fresh Mint/ पुदीना पत्ते – ¼ cup
Garlic/ लहसुन– 7–8 cloves
Dry Red Chili/ सूखी लाल मिर्च – 5–6
Peanuts/ मूंगफली – ½ cup
White Sesame Seeds/सफेद तिल – ¼ cup
Cumin/जीरा – 1 tsp
Coconut Powder/नारियल पाउडर – ½ cup
Asafetida (Hing) /हींग– ¼ tsp
Salt – as per taste नमक – स्वादानुसार
Oil / तेल – 1 tbsp
Amchur (Dry Mango Powder)/ अमचूर पाउडर – 2 tsp (optional)
🥣 Method
1. Take 1 cup of curry leaves, wash them properly, and strain the water completely.
2. Heat 1 tbsp oil in a pan, add curry leaves, and fry for 2 minutes.
3. Add fresh coriander and mint leaves; sauté them together for 1 minute. Transfer all to a plate.
4. In the same pan, add a little more oil and fry peanuts, garlic, dry red chilies, ginger, cumin, and sesame seeds.
5. At the last stage, add coconut powder and hing; fry for a few seconds and turn off the flame.
6. Transfer all ingredients to a plate and let them cool.
7. Once cooled, add all fried ingredients to a mixer jar along with salt and amchur powder.
8. Grind to a fine texture (you can adjust water or oil as per preference).
9. Store the chutney in an airtight container and keep it in the refrigerator.
Shelf life: Stays fresh for up to 1 week in the fridge.
