Ingredients
Suji: 1 cup
Milk: 2 to 2.5 cups (at room temperature)
Sugar: 1 cup (adjust to taste)
Ghee: 3/4 to 1 cup
Cardamom: 4–5 pods (crushed)
Nuts: Handful of almonds, cashews
Instructions
1. Soak the Suji (Crucial Step)
2. Fry the Nuts
3. Caramelize the Sugar
4. The "Makhandi" Cook
5. Slow Roast
6. Final Touch
Note: The sugar will immediately harden into a "candy" state when the cold milk hits it. Do not panic. Continue to stir on low-medium heat. As the mixture warms up, the hardened sugar will melt back into the suji.
